Black junk on cured unsmoked belly...
Took the 3 separate chunks of belly out of the fridge to see if it will fit in a rack I want to use and found these dots. Belly was dry cured. -

Now ^^THIS^^ is a great idea. Thank you. Sent Kristen, our vet, a picture earlier. Ernie is going to take her to the vet tomorrow. Kristen said it appears that the swelling has gone down, wants to rewrap it tomorrow- inkjunkie

Broken leg....
Woke up this morning to her chewing on the wrap. Wife tied some fabric to it to put it back together. We should have sprayed it with Bitter Apple when we went to bed.- inkjunkie

Broken leg....
Daisy, one of our Pitbulls broke 2 bones in her leg.... Have no clue,how this happened. Vet told us that because she is only 7 months old, and still growing, she should heal well...providing we keep her calm. Sent us home with doggy downers. Have to go back Monday to have her adjust the...- inkjunkie

My pile is not covered. Thanks to one of the hounds chasing birds it is no longer stacked. Will restack it. Over the summer plan is to build a lean-to of sorts.- inkjunkie

And select 15 pound packer. Gonna be a 0 trim, SPOG + paprika. My arm scale must be busted,picked it up because I thought it was only 10 pounds. Went digging thru the yet to be opened cases looming for one I liked.... -

Cured meat in the fridge?
It has been cured. Plan was to let it sit in the fridge to form the pellicle, but schedule has changed and I need to start smoking it tomorrow. -

I am sure this has been asked but Idid a search and couldn't find the answer in the first 3 pages of hits.... Have some belly that will be coming out of hibernation later today. Used TQ/BS. In the past I just left the belly in the fridge for several days till it "got sticky". Have also put it... -

Towards the end of last summer the base broke on my XL BGE. Warranty covered the replacement, as well as the firebox I broke in 08. October I noticed the fire ring was cracked....and the replacement firebox had a crack in it. Dealer replaced both. Was cooking some thinly sliced flank for tacos...- inkjunkie
