    trailer size smoker survey

I have both a 120 and a 250. Both are reverse flows, with a single rack in the cook chamber. I have found that I prefer the 120 the majority of the time as it has plenty of capacity for almost all family or friend gatherings. With vertical racks for ribs I can cook 27 slabs at once, or can throw...

    Smoker/Grill: Industrial Piping Build

I have to agree with Radio... If you have any galvanized metal between the fire and anything you are cooking.... get rid of it..It is OK in the stack as long as it doesn't extend down into the cooking chamber where it might get hot enough to start to produce fumes.

propane burner in a reverse flow

Just a thought, but, if you plumbed in 3 or 4 drains, spaced down the entire length of the burner ( all connected to a single large valve for grease capture ) you would possibly have better air distribution for all of the flame??? I have a propane burner that sits on top of the reverse flow plate in my 120 gal trailer cooker. I have a removable 5 in wide 1/4 plate that is raised on "legs" above the burner to deflect the grease and also "spread the heat" a little. I can get the grill hot enough to cook steaks, and have...

    Question for anyone with info.

Hey guys, Not that I want to give my age away, but several years ago, I owned a Charbroil CB960 charcoal grill. Honestly one of the best grills I have ever purchased. Anyway, I also had a charcoal box that would drop onto the fire grate, hold about 8 lbs of charcoal, had cast iron grates inside...

    What makes my meat black??

What they said! Sounds like a problem with your wood not burning cleanly ( not enough oxygen getting to the fire ? )

    New guy from Alabama

Hey Guys, Been looking at this forum for a while now, and finally took the time to join. I have watched with interest several of the builds that have gone on and have tried a few of the great sounding recipes that have been posted.  I build my own cookers ( strictly for my enjoyment as I don't...
