    Might want to prop up the grate with something so the skillet doesn't block too much of the opening of the burner. The wood chunks won't catch fire if you set the height right.

    If it was mine I'd ditch that bottom rack with both pans and set a CI skillet with a big ol' chunk of wood right on the burner and then put a drip/water pan on the lowest rack.

    Well, I wouldn't want the entire bottom of the smoker open... Gas smokers are no more dangerous than a gas grill. Common sense goes a long way, but you can blow yourself up with either. If you're going to use holes, make them decent size. 2" or more would work. Or make something like a 6"...

    Yea, you need to have the underside of the burner open to air for 2 reasons. One, as was said, the burner needs fresh air to burn clean.
