    Lowest I run on gas is 225. I have an electric element installed for col smoking . The needle valve allows for finer control of temps.

    The HP regulator is set to adjust my burner to high with the needle valve wide open. Turning down the needle valve gives fine control of the gas flow .

    Unless it's very well insulated you'd need ~5000W to reach anywhere near that temp. 1W = 3.4btu and 1.5btu per cubic inch would be minimum

    On any vertical smoker the CC acts as the chimney so all that's needed is an exhaust .

    I freeze them and put them on frozen. That gives more time for the bacon to crisp and the filling doesn't ooze out.
