Tried my new charcoal basket with a sittin chicken. Apple wood and some homemade bbq rub. Took the diffuser out to see if I could get the heat up, 260 was the max. The basket worked great but the smoke was A LOT thicker. Forgot to take plate shots. Just started stuffing my face. It was... -

Completed my mini build.
I don't use a gold, but I use a foil covered clay pot base 12" as a diffuser and that keeps mine right a 250 with top and bottom vents open. I use it as a water pan too (I know methods and thought differ on this). I am just guessing here, but the steamer pan is really thin aluminum and full of... -
Whats your favorit scotch, rye, whisky or burbon.
IMHO. Bourbon and Rye Bulleit makes a great Bourbon and Rye. Their bourbon has a high rye content which i like a lot. Two Fingers...two ice cubes and a good cigar = Awesome way to end the day!
