Took 10 hours at 225 to hit my mark. It was really good. I had to drop another small chimney of coals at 7 hours. Probably could have waited another hour.

I purposely left the ash cover i normally use in there which seems to be preventing that. But at this low temp the fan is barely on. Higher temps?? That could be an issue. I wonder if a grease cover for a frying pan with the handle lopped off and placed at the bottom of the pot would help...
