I now only use flaxseed oil on my CI, it works great. The process does create a bit of smoke and odor, I think it best to do it outdoors or open all of the doors and windows.

Yea we got some but they taste better when cooked along the river. I made one batch and was not happy with it, I need to learn to experiment with 1 pound at a time.

Many of the UK sausages contain ground up rusk (A rusk is a hard, dry biscuit or a twice-baked bread.) to help improve moisture, soften the texture and to reduce cost. They also add a good bit of water/liquid to the mix. I would prefer something like that to chemical additives.
My parents and grandparents would always smoke their sausage and tasso for a few days straight. They all lived into their 90's. This was in the heart of Cajun country. Strongly smoked sausage made with quality meats is hard to find and what I miss most from the area.

Down in the desert we have a very few cool/cold days. So as not to heat up my MES to get a draft going I use an old PC fan on top of the box opening. A 6v wall-wart powers this one, I turn it off once I get a good smoke moving through the box.

Smoked onions are a great twist on the normal. I have not thought about smoking flour, sounds like it is worth a try.

I remember fighting with knotted hanks when I has a chef,not fun. I think I would have gotten frustrated and cut that thing. I never found one that long, call Guinness!
