    I think I might do chicken or ribs... something that wont take too long.  There is far too many fireworks, and too much beer to spend too much time with the smoker.

    I did put all the juices in a tupperware overnight and skimmed the fat off the top.  It looks like the most delicious pork/apple jelly.

    Question. What do you guys do with the fat cap? Mine slid off when I grabbed the bottom hunk, so I grabbed it and shredded it in with everything else.

    Almost done, 198 IT. Gonna pull it in a few minutes and let 'er sit for about half an hour then start tearing it apart.

    Had some BB rib meat tacos for dinner while watching the smoker. Fried corn tortillas woth some guacamole was AWESOME. Will definitely do these again with left overs.

    Yeah, I hit my time limit and had to wrap. Stalled pretty hard around 155-160. Wrapped it at 167 about 45 minutes ago, and we are at 174 IT now.
