Update: the IT in the cooler was at 158F and I didn't feel comfortable getting close to that 140F. So I ended up moving the brisket, aluminum still wrapped into the convectionl oven at 195F. We'll see how it turns out!
Must be something in the air, my 14.5 brisket was at 195 within 12 hours. I too have mine wrapped in a towel in the cooler for 5 hours. Another member mentioned it should be fine as long at the IT doesn't drop under 140. It's been two hours and my IT is 167, so I think I should be okay.
Thanks B-One for the input.
That's excaclty what I did, shut all the bottom vent and left the top open. I actually drained the water pan, maybe I should put some water back in to lower the smoker temp (?). It's currently sitting at 189 waiting for the IT to hit 195 and then pull, 10 min rest...
I think I started to early...currently the IT is 187 and I think I need to pull it off the smoker. I want to be able to slice it, and dinner isn't until 5 pm. What should I do YIKES!
It's been 2 hours and the IT is already 144..that's a lot faster than I expected. Can that be right? The smoker been holding steady around 230-245'ish. According to my Mav ET-733
