Looks like a great project!
Here is a link to the Auber PID that you would need to have the capability to "ramp" (program) the temps up such as in doing sausage.

The next thing you have to consider is the 1250 watt, 120 volt elements...
Hi Ron
Overall I'm very happy with it. I've done loads of sausage as large as 80 lbs in it. Of course with that much in there it does take a little longer but it gets the job done.
In the final photo with the door open on my big smoker, the smoker that is beside it is a Bradley. I have built a...
I always start mine at 130 degrees for at least an hour to allow the sausage to dry somewhat, then increase the temp to 170 until the IT is 152. I have tried to sneak my smoker up to 180 before to speed things up but it always resulted in the casings being a little tougher. I think if you start...
Hi DysartSmoker
The Centro Smoker at Canadian Tire is basically built by MES. It is probably just marketed under the Centro brand in Canada or something like that. If you compare the two of them on the internet they are identical. I don't have any experience with them though.

Hi SHellbellc
Sorry I didn't get back to you yesterday, I was swamped at work and never had a chance to get on here. Hey how can anything be bad when bacon is involved!
Here is a link to the Bacon Wrapped Chicken recipe that I use.

Hey Salmonclubber
I have the same grinder and stuffer as you. I did get the motor separately and it really makes it into a comfortable 1 man operation.
If you are going to purchase the motor for it I would recommend phoning Weston (They manufacture the Cabelas stuffers). They sell...

I have the Cabelas 80L Commercial Dehydrator and it works very well. It has good air movement and an electronic thermostat so I usually don't have to rotate racks. I use mine mainly for jerky. I usually apply the smoke in the smoker then transfer it to the dehydrator to complete it. Overall...
The controls (PID, SSRs, Thermocoupler, Heat Sinks) came from Auber Instruments. Here is a link:

The hight temp blower came from Acklands Grainger here in Canada (Grainger in the USA). The finned strip heaters are also available from...
I just thought I would post a few details and pictures of a recent build I did.
I picked up this Proofer from a guy who was no longer using it. It had been sitting outside for a while so it had lots of oxidization on it, but it cleaned up fine using steel wool and a mixture of vinegar and...
I've been a lurker for some time. I even signed up sometime ago but never really introduced myself. Anyway, I've been smokin' for a few years now and do a number of things such as butts, chucks, ribs, bacon, chicken, sausage and jerky. I started smoking with a Digital Bradley which I've modified...
Thanks for the compliment Josh. It's kinda a.... "continuing work in progress". I love to tinker so I'm pretty confident it will never be "complete".

Mulepackin
I live in Canada (Saskatchewan) and our winters are a little on the chilly side. We also have an abundance of wind so I built my smoker into my detached heated garage. I have a 250 cfm range hood installed with a direct vent through the wall. My smoker started life as a Bradley...
