Is Jeff's rub good for beef ribs? I don't do pork and finally found a store i can get beef ribs.

I have never used cure in making my jerky and always used either soy sauce or teriyaki. I make the jerky 100% in my smoker.
I have never had an issue with food safety. I have just started using my new MES which i can temp controll it.

Well, I bought the newer gen 40" from Cabela's as it was on sale for only about 50$ more then the old generation 40" and amazon is charging sales tax for California.
I am looking at buying a MES 40" but can't find any info on what is difference between the latest on and previous one except where controls are.
there seams to be a $100 differnece between the two units.
Can someone shed some light in this?
Thanks for the info. I won't have to worry about pork ribs as we don't eat pork, but beef ribs will be on the menu. I'm not thrilled about buying wood biscutts with the bradley product and have been leaning towards the MB.
If i am making jerky, can the MB generate enough heat to create smoke...

I'm looking for a new smoker to make beef jerky. i will be using the new one to make more then jerky though. I have a Luhr Jensen little Chief which the chip pan is burnt through and is not insulated and unusable in Southern Cal in the winter.
It looks like people are partial to Master built...
