    Thank you! I was very pleased with the first attempt at brisket , I built the smoker from scratch and it definitely justifies all the hard work :) I am completely addicted to bbq lol

    I smoked mine at about 250 wrapped it in butcher paper at 160 degrees, had a little trouble right at the end the temp dipped to about 225 but I hit 200 degrees IT wrapped it in towels and threw it in a cooler for 1.5 hours.     need advise about the welding.

    Flux core (FCAW) without a shielding gas is very messy it works OK, but FCAW wires that require a seperate shielding gas as well, are easy as pie. But as with everything depends on allot of factors, the machine, the experience of the welder, the ground, if the metal is clean or dirty. Etc.

    Thanks! I used pecan and it held temp very well when it'd start to drop a little bit just threw in a little wood and some coals and it was set pretty good. Very pleased with how it performed.
