I generally leave mine open while I'm in the add-wood stage so that the smoke continues to move and doesn't get stagnant. If you have it shut all the way, the excess will go out by the gaskets which is fine, but will eventually build up some "goo" there.

When mine is in the mid 30s or so, I lose the first digit on the controller. It's easy enough to figure out while you set your temperature though so I don't really worry about it too much because it comes back as the smoker warms up.

If you're worried about the raw eggs, using pasteurized eggs will help with that. We can't find them around here, but the larger cities should have them.

Whatever I'm already using, usually cherry or hickory. I occasionally will just make up a batch of Dutch's beans and some ABTs all alone, and then I'll use hickory. I like the sweet-hot combo of the beans and peppers.

Another reason to get the Rytek book is that so many people here have it. If you have a question and give the page number, and if you listen real hard, you can actually hear all the pages flipping to that page number so that they can help you out!

I would guess that if you were organized about it you could put 4 per shelf without any problem, so 16 total in the 40". I once had 8 butts in mine and everything fit well and they're about twice the width of a fatty give or take.
