    My MES racks fit in our dishwasher, but this is a great idea for the Weber grill and (hopefuly) soon to be UDS.  Just so happens I'm going to Hme Depot today!

    Yeah, it was in the 50s here yesterday and spent a lot of the wait on the deck w/ a Sam Adams Mighty Oak Ale.  I was cooking at 250*, but wonder if my drip pan might have covered too much area, but then the prob was above the pan.  And why the temp variation, most of the smoke it held at 250 +/-...

    Dave = thanks, failed physics in college, oops that was chemistry, oh well--- Like the idea of smoking every day but can't aford the meat!!  And beef is going up.  Just have to hope it warms up soon, oh yeh, I live in S. Illinois!

    Finnaly hit 165* at 6:35!  Spent 35 minutes at the "stall".  Actually had a temp drop in the cooker - don't know what happened.  Meat loaf came out good but as the better half said - "probably not worth the extra time vs the oven"

    Opened my MES today, hadn't used it for a month, and there was moisture inside.  I assume it is just condensation.  The exhaust was open and the smoker was inside an unheated shed.  If I leave the wood chip tray out will this provide enough circulation to prevent this in the future?

    Put a meatloaf on at 1:45 PM and it's at 145* and not climbing at 3:45.  Does hamberger stall?

    Got into this obsesive hoby last fall, got an MES 30 and did butts, turkeys, brisquets, etc.  Then converted an old ECB and played with it, but didn't like the lifting on and off the fire pot and percieved lack of control on temp.  I'm sure it's just a bad case of the wants in this new hobby...

    White bass

    Freind gave me a bag of white bass - after some badgering - never fixed it befor.  Do I deep fry, pan fry, smoke?  Is there a thread on the technique of smoking fish?  Dont know how big the filets are.
