    Question on Meatloaf

    I also had a problem w/ a long smoke on a meatloaf.  Think it ended up 4 hrs.  Never did figure it out, but the ML sandwiches were great!

    I'm ridin this thred---Wife & I were just talkin about putting patio blocks down so I've got someplace for my smokin toys.  Got a metal shed I use my MES in during bad weather, but now place for the UDS or Weber grills. Bring on the ideas!

    Help with turkey

    Finaly done, started at 10, finished at 4:30, 6 and 1/2 hours for 10 pds.  Once I spiked the smoker to 300*+ it started raising in temp, strange as I've cooked several turkeys in my MES at 250* w/ no problem.  Another turkey in the freezer so we'll see what happens next time.  Thanks for the input.

    I've had a spatchcock turkey on my UDS for 4 1/2 hrs and barley made the 4/140* treshold  Smoker at 250-260* for 1st 3 hrs, then jumped to 300* - 74* outside, strong wind (windsceen in place), 10 lb bird.  Why the slow increase in internal temps?  Does location of vent have a bearing - over bird...

    Great info in this book, just remember, it's like buildng a UDS - there's no "only way to do it" but the basic design is important.

    Believe Chef JJ - I have an MES and it makes great BBQ - You can use the wood chip trey it comes with and have good results, or go with the add on like the AMNPS.  Nice, plus in your sitation (second floor deck) is its electric and generally gives your neighbors fewer things to complain about...

    UDS love

    Started my new UDS yesterday at 9AM, double smoked a spiral cut ham per Jeffs  news letter - Clans review were all good, and now it's 23 hours later and the UDS is still at 204*!  Guess I should have thrown a brisky on when I went to bed. Many good smokes to come

    OK, I've got my UDS, now I need a bottle opener to put on it - Mandatory add-on, right? So where can I find a bottle opener w/o paying more for shipping than I do for the opener?  It's going to get real dry around this smoker if I can't correct this design short fall!
