    Christmas brisket

    Surprising fast cook - 6 hours and done.  Test taste awsume (as the kids say) then to the frige.  Santa brought the fastest thermapen - orange!  Kids come at 4:00 so the real critics will be here soon.     Christmas brisket

    Started the UDS at 4 this am, brisket (two at 7.5 lbs ea) on at 4:45.  Looking good- have the wind screen in place, not so much for wind but temp is 35 with fog moving in so just for general protection.  Ball valve full open and WD 40 cap w/ hole on one vent, other one is capped.  Holding at 250...

    Housing a smoker in a shed?

    Ran my MES just inside the door of my metal garden shed, doors open just enough to get into the smoker.  Worked fine, but havn't used it for my UDS, built a 30"X30" wind screen/cover for it and it backs up to the shed.  All kinds of workable options - give it a try!

    Hi, I'm Steve from Dorchester (West of Litchfield, South of Carlinville, next door to Gillespie and Bunker Hill).  Smokin for a year and half, have UDS, mini WSM, MES 30, and 2 webers. Smoke somthing about once a month.  Did a turkey for thanksgiving, think it was a hit - no one died from it!

    Did a small turkey on the UDS wedneday to go w/ the BIG bird my wife and her sister did for the mob (25 perps).  Lots of good comments on the smoked one, I havn' checked the frig yet, hope somes left!

    Wife asked her 1st grade class, a ways back, if anyone knew what the four seasons were - you're ready for this right? - a boy in the back waved his hand back and forth to get her attention and he said squirle season, duck season, turkey season, and deer season.  Only A grade he got that year.

    Anybody Buy from and Aldi's?

    Shop at Aldi's monthly and happy w/ the results.  Many strang brands and lables but found most to be comparable to store brands elswhere.  Good produce.  As w/ any store, know your prices and compare!  Bring bags and a quarter.

    OK, did a search and still not clear - when doing a fatty I understand that eggs are precooked, but what about other ingrediants?  Hashbrowns - precooked or raw, onions, peppers, etc sauted first?  Maybe there's a thread out there that gives all the techniques?
