    So I took a Brisket and separated it into flat and point. Cut flat into 2 pieces. Did a dry cure 1.5% salt, 1% sugar, .25% cure #1. Rubbed that on the two pieces of flat. Then I made a wet cure for corning the point. Flipping everyday and giving a small massage. First question is how long...

    I personally add my salt to my rub, blend it up, hit the brisket with light layer of mustard or oil, rub down, wrap in plastic wrap, and let it sit overnight. Pull next morning while I'm getting smoker prepped and going and then putting on the smoker. I tend to get good results

    I am running at 225-275. Fluctuations happen when i have to add fuel. Unfortunately running cheap charcoal so it burns faster. Not to concerned just never had one stall at that temp. Usually happens at 160 to 165 for me

    Final product turned out good. I am Amazed at how tender it is. Glad I got my first bottom round done. After cutting, and snacking, and two sandwiches we have 4 lbs of roast beef sliced and in the fridge. I will be doing a brisket soon. But I will definitely do this cut again.
