I couldn't be much happier with the results of the biscuit test today. Tomorrow will bring us yard bird. Then it's on...
I agree with the previous entries. Please control your smoker via the air inlets on the firebox and run the stack wide open.
A little story. I'll try to make it short...
I had a small horizontal off set smoker, not a RF. Still have it. In 1995 I had it set up under a roof (shade) that was...
It should sell pretty quick...
I'm ready to see the next build.. I'm gonna tear my old 20 year old 16" offset smoker apart and RF it. It is built of 3/16" stuff, so it should hold heat good.
btw. thanks for the advice along the way...
Good luck old man..
If I was looking again, I'd look at both MIG (wire feed) and ARC (stick) and purchase the most I could get for the money. There's times while building my smoker that I wished I had a stick welder. I am NOT a pro Welder by any stretch of the imagination. Just my $.02
Okay, the 2nd burn is in the books. Way better results this round. Yesterday had me worried.
I loaded up basket with 12# of Kingsford Blue and 4# in the chimney. With doors closed and vent wide open, the smoker came up to 335-degrees on the hot (fire) side & 290 on the cool side in less than 30...
You just aged yourself... The burn looks pretty good. It's still running. I let it run up to just over 300-degrees on the firebox side and then started closing the air off and seeing how well it evens out. So far I'm about 35-degrees apart side-to-side. Gonna throw the biscuits on soon.
Rib Man --> You are right about starting another. BUT this dude is gonna cook OR I'm gonna beat this dead horse 'til it gets up and goes. Remember the rebel thing? Can't have my first build end in failure or mediocrity, Can I?
Good Morning Dave...
You are correct on the math. My stack is a bit taller @ 34" above the cook chamber and 11" inside the cook chamber. My numbers are rounded off as my tank is not 24" inside diameter, it is only 23.25", I figured it's close enough. I just mis-spoke when I quoted the outside...
RH - I am about 1 1/2 hours south from you on Lake Buchanan. I have a world of free time and have a Lincoln 180 220v MIG welder. (I found it on Craigslist NEW for only $450.)
I used to use a stick (arc) welder years ago. I can show you what you need to know in about 20 minutes. Bring a hood and...
I smoke mostly packers. I trim the fat cap down to 1/4" and cut the 2 canoe shaped fat layers between the flat & point out. Coat with mustard and liberally with my favorite rub, smoke @ 250-degrees for 3 hours. Then foil (get the smoke off) and back in until 180-degrees then they come out of the...
Thank you Mike, I can answer any questions you may have. I didn't want to follow any standard as I wanted a difference between my smoker and everyone else's. The 2" X 6" rectangular tubing did cost me big time, but I have never seen a stack like it, so of course I had to have it...
Make no...
Rib man --> I second Roushy, I am my own worst critic. I ALWAYS find fault and shoulda, yadda yadda... My wife has to tell me to just fix it next time and just enjoy everyone helping themselves to second or third helpings of brisket (or yard bird). But after years of smoking and even being...
The season burn went.
I ain't saying it went good and I ain't saying it went bad. It just went.
I coaled up with Kingsford Blue. I began with 12# Minot style. I quickly learned that my Maverick ET73 dual probe thermometer has an issue. I was reading up to 90-degrees differential between sides...
