Tips for making jerky in smokehouse

Howdy all, I'm looking to make jerky in my smokehouse. Any tips on getting the temp/airflow just right? I am making a smokehouse with a 55 gal drum for a SFB. Also attaching a mailbox for a future AMNPS.

    Is whitewood safe?

@timber If you look up definition it is kind of a generalization of different woods but the take I got was anything that isn't treated with chemicals for pressure treatment/pesticide.

    Is whitewood safe?

Yea Dave I already have the thread started. I took vacation next week to finish but my boss said don't worry bout charging leave just don't come in haha. I am doing it like ATCNicks kinda but instead of doing the sfb out of bricks like he did I am using a UDS strictly as a SFB and piping it in...

    Is whitewood safe?

I am constructing my SH out of white wood from Lowes/HD. Is that safe to have on inside cook chamber or do I have to insulate/cover up? One thought I had was to coat the entire thing in high grade oven paint. Thoughts?

    Starting the Smokehouse

After a lot of deliberation on what to do for a SFB, I decided on doing a UDS/smokehouse hybrid. The cost of molding my own with refractory/fireclay and brick was too expensive so I bought a practically new one off Craigslist. The drum itself is new but was used to ship new motor oil so I will...

    Firebox UDS

I'm actually using my drum as a SFB for my smoker. Not exactly the same as you are referring to but I do know that the biggest problem you may run into is temperature if the SFB is too small. Some use charcoal to compensate a hotter burn.

    Cedar smokehouse construction

Corbion, Good morning I am doing one similar to Nick's and plan on adding an option to add a platform and using an AMNPS for cold smoking. regards Steve

    Cedar smokehouse construction

So AMNPS just generates smoke for cold smoking mainly and you can either go propane/wood burning/charcoal etc. To generate the heat. I will do oak burning and flavored wood chips in a side fire box (SFB). There is no one way to skin a cat (or in this way smoke some Q) so get creative. Can be as...

Smokin' in the wild wild west!

Haha Stuart welcome. I know what you mean by obligations that fall inferior to BBQ lol. (4 month old baby and a wife renovating 3 rooms in the house). I started off my love for the Q when I was stationed in Rapid City, SD actually. Started off doing jerky in 2 dehydrators. Something you can look...

    Newbe from Kansas..

Greenjeep welcome! I am fairly new to smoking myself but am light years ahead of where I would be at without this site. A lot of folks use photodump or photo bucket. It may be a little tricky using the URL coding but I am sure there is a thread on here explaining in more detail.

Ed welcome to smoking and from an Air Force vet and Active Duty Navy sailor thank you for your service. ATCNick hardly replies so I'll shed some light on a few of your questions. The "white slabs" you refer to is the fire brick. Most of the guys/gals in here go out and hunt them down from...
