    Welcome to the group. Nice to here a couple smoking meats together. Good luck with the Brisket. Not sure what kind of wood you are using but Cherry gives and good flavor to beef if you want to change from the normal Hickory.

    I would say if the tray as holes in it leave it on to help control the amount of smoke and I would soak the chips to make them last a little longer.

    Welcome to the group. Wrapping will help get past the stall. If you plan to pull it you need @200. I've done then to 185 and it sliced very nicely. Good luck either way it will be worth the wait.

    25 Anniversary Party

    Thanks took a little over 12 hours for the pig to be done. Everyone enjoyed it and said how jucie and tender it was. Guess that's not to bad for the first whole pig I ever cooked.

    Here is a couple pics of Q view from our 25 Anniversary Party yesterday. 100 lb pig and a couple Briskets. Had about 80 friends and family at the house to celebrate with us. Every thing came out great.

    Guess I was lucky enough to have a big welder. the Lang I wanted was @$3500 I built mine for just under $500.00. Steel for legs and fire box cost the most, but I had a steel company about four blocks from my shop. Have some big plans for it this summer. Cooking a pig in it next weekend for wife...
