WHICH SMOKER TO PURCHASE FOR FATHER IN LAW

I agree with Bama and Mule....Buy him a WSM and let him keep his gas grill for quick cooks. The WSM comes in 3 sizes , one of which will be right for him. There is no better smoker for the home cook.

    Whole or Spatchcocked

Just for space and time saving considerations , I like to split a turkey and do half on each rack of my WSM . Speeds up the cooking big time. Saves charcoal too. Turkey comes out moist and juicy with great crisp skin.

New house has a brick smoker

wicked cool ! yes. get a fire going and see what it does. I bet you could use charcoal when you actually cook in it. throw in some wood chunks for smoke, what a cool find.

    Small Garden in East Texas

I've pulled up all my plants but one. I'm waiting for the last few to ripen. I've got a few hot pepper plants that are hanging on and as long as we don't get a frost we might get to pick some good stuff yet. These little Tabasco peppers are like firecrackers!

    Eye of Round Roast

exactly right. that is sound advice. eye of round is lean beef. go much higher than 140 and you can make sandals out of it. to me , I like to go to 125 maybe 130 tops. that way the middle is still nice and pink so when you reheat it , it doesn't get overcooked.

How often do you add charcoal to an ECB?

I had a brinkmann gourmet which is a grade up from the ECB. But even at that , it's not a smoker you can walk away from. To me , every cook was different. You might go 4 hours on a load of charcoal but you might only go 3 or even 2 ....and in truth I never used lump charcoal in those days. My...

    Small Garden in East Texas

Little different here. It's been a cool summer and my tomatoes did really well. I think I'll be picking stragglers in October. Green peppers were nice even tho I only planted a few. Winter squash came out good. My cucumbers didn't do anything this year. I don't know what went wrong there. I've...
