Stan if you do decide to go for the MES 40, you may want to consider the older generation . You can still get that on Amazon. it's about 100 bucks more expensive than the new generation....

as someone else pointed out the MES does have its problems. I don't want to make anyone angry who uses it and enjoys smoking with it, but the fact remains that to make it work you will need to do a few mods. Also it is not the most reliable unit out there.

then foil the ribs, add some BBQ sauce if you are using any or a bit of apple juice 230F for 2hours.

put a thermometer in your unit. i have several, so a cheaper high temperature oven thermometer will work but a digital unit like a Maverick ET732 will make things easier as well as more precise. it's about 60...
I am not faulting the unit for the temp swings. It is part of the electric experience for better or worse. My worry about it is specific to lower than expected temp swings. That is if the unit can't reach the maximum temp of 250 as average. IE if you set it to 250 and it swings between 220...
35* swings are reasonable. if you check your oven temperature swings (if you have an electric oven in your kitchen) you'll see similar swings.
