1/8" is a little skinny for a RF plate. If possible, go thicker since you are depending on that metal mass to keep temperatures stable across the length of the plate. 1/4" would be better and 3/16 if you can't find that. Besides, 1/8" tends to warp like crazy when you try to weld it up...
Dave is right yet again, and the tool looks like it would work great. Do you have a rosebud for a torch? I agree that heat well make it a lot easier for sure.

That should work just fine, don't forget a smaller upper vent on the firebox door directly across from the CC opening, it will allow you to move air through the smoker easier to help control temperatures. Looking good!
