    Anybody like pecan wood?

Pecan is in the same genus as the hickories, and is a preferred smoking wood here in Alabama where it is grown commercially for nut production. We use it green or dry with great results. Smoke on, Wes.

Mick, Thanks for further explanation - it's just what I needed. I am copying this thread to my evernote library and will follow your lead on my next brisket attempt. Great job! Best, Wes

    Meat grinder

Dave, Thanks for the advice. I have a fridge in my meat prep area, so I'll strive to keep the grind as cold as possible. I see what you mean now by the shilling, guess I'm behind the times and didn't realize people get paid for reviews. I'll make sure I don't post something of that ilk again...

    Meat grinder

My post was not meant to promote the grinder, as I have no connection with the company. And, I can ensure that I'll never attempt to grind that much meat in an hour, maybe 50 lbs at the most. I am thinking of getting a grinder of this power, because I have owned cheap ones in the past that...

New Old Country Wrangler Smoker - First Brisket

Beautiful Mick. I want to follow your lead soon. I like the way my ribs and butts turn out on my Smokin' Tex, but my briskets have always turned out too dry. I think that's because I never foiled them. So, I didn't see foiling pics above, but you indicate that you foiled at IT of 160, and...

Great for restaurants, meat processing shops or anyone wanting a heavy duty grinder at home. Handles deer, elk, moose and any...

    Disappointed with Masterbuilt

I've had a Smokin' Tex for about 5 years, and it has been a reliable cooking machine.

Ok. I hate to be a dumb@&$ newbie, but how do I "drop the thread"? I don't see a button to delete it. Sorry, seems this is becoming more trouble than it's worth.

Ok, can I just switch it, or will it end up in both places?

    Montreal Smoked Beef

Hope this is the right place to start this thread. Just bought the ingredients for this, and have a brisket in the freezer ready to go when they arrive. Will do my first Q-view as I go through the process. Also bought a Vacuum Sealer PRO 2300 - Stainless Steel with Blue Lid from our sponsor...

Victory Garden and Brown Thumb! (more pics 6-20)

Hard to tell here, but the bamboo trellis has concrete wire strapped to it for the cucumbers to run on. My garden is late this year, so it's way behind yours Kat!

Victory Garden and Brown Thumb! (more pics 6-20)

Kat, It's too late in the year in AL for cabbage to make. I wouldn't waste any time on these except to pull them up and toss them on the compost pile. It's getting too hot, and the critters will continue to snack on them. You can continue to baby them, but in the end you still won't have...
