seasoning my UDS and poor temp control

I went to bed last night with smoker going and this morning it is out obviously. But what surprised me is the charcoal was only half burnt. I had two intakes open and a 12" exhaust stack on the lid that I added last night mid burn. Why didn't the charcoal burn all the way? Could it have been...

seasoning my UDS and poor temp control

With the valve full open and the other 2 capped, it doesn't hold temp. But I have discovered that if I uncap 1 intake only and leave the valve half open it can maintain 220. So with an empty smoker it appears to hold long smoking temps I will have to leave one uncapped and the valve 1/2 open. I...

seasoning my UDS and poor temp control

I just have a feeling if i dump a load of charcoal in the baket and then add 8 or 9 glowing coals to the pile, it will take 2 hours to get over 200. Just now after 2 hours and 15 minutes with 2 open intakes and 1 capped, I had over 220. I capped the open one and left the valve full open to see...

seasoning my UDS and poor temp control

Update....After posting the secon response, I went out and checked temps. With both intakes capped and the valve wide open., the temp had dropped to 190 in 10 minutes. I cannot seem to keep a burning set of coals up to temp with just the valve open and both intakes capped. this does not seem...

seasoning my UDS and poor temp control

After posting this I went and checked the temps. They were at 210 degrees. I capped both intakes and left the 3rd intake with the valve wide open. It is still smoking good but just taking its own sweet time. I realize if I was to start a basket of coals like I would on my grill and let them get...

seasoning my UDS and poor temp control

Someone give my a scenario for when they ignite the coals in their UDS. I got mine seasoning outside now with peanut oil and the temps are rather dissapointing. I plan on using the Minion method when I actually smoke something to get max life out of my coals. But to season, I just dumped a half...

    Lid questions

My drum has a lid that had a band clamp. I got the band clamp. I got the lid all set up with my handle and exhaust ect. I also scraped and burned the gasket out of the lids lip. The lid fits fairly tight. If one side is seated on the drum the other side will stick up a tad unless you press it...

    Thermometer questions

I have 3 thermometers. One came with my weber and sits in the dome lid and you can remove it, but I never use it on that grill. The other is I believe an old Snap On AC thermometer that goes to 220 degrees. The 3rd is in the door of my masterbuilt electric. It has a wingnut on the backside that...

    Paint

How many colors does "high temp" paint come in? Can you just use standard paint or does it really have to be high temp? How does everyone get those cool team macotts on their barrels?

    transport a burning smoker?

I got to thinking about this post while I was outside working on my build and................I realized just how stupid this sounded. I really do have common sense. I just wondered about transporting a fully sealed off unit. But honestly I got to having visions of corn fields burning along my...

    UDS Grill and Oven

I think it makes me hungry. Looks like more of a grill than a smoker. Very cool I admit but doesn't seem very air tight.

    transport a burning smoker?

Hi guys. I would like to think of maybe painting my UDS I am gonna build the colors of my local university and use it not only at home but also to tailgate with on game day. My question is simple. If I wanted to cook something that required several hours to cook (longer than the time we had...

Why 3 intake ports instead of 1

I bought all my hardware at the Home Depot today to start building my UDS. I bought 3    3/4x close nipples and 1 ball valve and 2 caps. This is what my parts list called for. Before i start drilling, can anyone tell me why you need all 3? I would think just one nipple with the ball valve could...

Ideas for building my first offset charcoal smoker

With a UDS I am just gonna use a single rack. The UDS will be much bigger in diameter than the current box I have now so it will hold more on a single rack.
