    smoked potatoes worth it?

    So I tried them again, this time on my new WSM with some chicken thighs.  I used smaller potatoes this time, and Yukons instead of Russet.  Rubbed in olive oil and some kosher salt.  They came out awesome!  They will definitely be made again and I will try Russets again if I get smaller ones...

    Nope was not using the lid thermometer.  Weird thing about that.  During the dry run it ran 8 degrees cooler than the probe.  When I loaded all the meat and potatoes on tonight, the probe was running about 15 degrees  cooler instead.  Yes I have read to always leave the top vent wide open and...

    Oh and yes, in that first picture you can see my attempt to keep the wind at bay with the patio chairs.  I don't think it really mattered.  I didn't get any crazy spikes after moving them away while the potatoes finished.

    Thanks, that sounds like a reasonable range.  Definitely will try to keep it lower for ribs and brisket.  I think my temp problem was like I said starting with the vents at 1/2 instead of fully open on the bottom and that I really don't think I had my 10ish briquettes lit fully.  I won't make...

    Haha, woops guess I wasn't clear.  The person is allergic to mustard (and Sesame as well).  I was simply using the peanut reference as an example of what happens when the person is exposed since mustard allergy is not well known but many people have heard about deadly peanut allergy reactions...

    Thanks again guys.  Yeah I figured out after asking that most of the time mustard ON the meat is just to help the rub stick so I guess I just need to find substitutes for when it's in rubs and sauces as a real ingredient.  So far that wasabi powder or horseradish is looking like the best...

    Any particular reasons?  I was eying the 18.5 myself.  I don't think I'd ever be cooking for more than a dozen people max and probably half that more often.  The 22.5 would be nice but I'm thinking it's overkill for me.

    Yep as a matter of fact I used olive oil on a tri-tip I did last night.  I think things like sauces and the rubs themselves are the real problems.  I've just been leaving it out but coming up with a substitute that works well would be awesome.
