    Well I boned it! I set my alarm for 6am but I actually slept last night, finally, and slept right through it! I woke up at 8 and got the meat on at 9. I hope things go well! It's certainly full!

    Not arguing a rest at all, I want that time alotted as well, I've just never dealt with these kinds of temps, that's my big worry! Honestly, I'm about ready to fire it up and go just to be sure! Laugh all you want, but let's see you smoke brisket and ribs at 17deg!

    No wrap, just low and slow. I'm hoping to hold 210-225 temps, but it's a stick burner and the temps are against me!

    Looks great! Just knit picking here, you may need to raise the fire grate, I can see a long smoke filling that area with ash and choking off the fire? Just a thought.

    I still go slow and low, 210-225 as best I can hold it. I get two stalls, 140-150, then again at 170-180. Last brisket, 15lbs, took me an hour on the first then two and a half on the second!     No where near high enough IT! I take mine to 205 before I even look at them. I think your pit temp was hot enough, you just hit a second stall and under cooked it. Remember, brisket is done when it's ready to be done, not a second before then!
