Welcome from a fellow Hoosier! Sounds like you may be getting some help from Mr. Ramsey which is always a good thing (emergency fund).
I have a Performer and love it. You can smoke on that pretty easily. Ribs and Chicken especially but I've had friends do pork butts on their 22.5" kettle.
+1 for a propane torch.
Todd sells one on the amazenproducts.com site but you can also pick one up at most local hardware stores in the plumbing section. It just screws on a small bottle of propane.

I started off back in 2007 on this forum in the same situation. I got an early Father's Day present from my wife and kids and it was a propane smoker.
It was so easy to use and immediately got me hooked. Just season it well and go light on the smoke for your first few times and...
I've never really worried about the smoke leaking around the doors of my smokers unless I also notice the temperature fluctuating too much.
You could get an oven door seal and put that around the inside of the door I suppose but only if you're having temperature control issues.
Dustin I found one at a local Meijer store that fit the bill. It's a rib roast / rib rack. I had 2 sets of the Weber rib racks and they offered little support. I forget the brand name and am still trying to find it online.

I got the MES 40" put together and cleaned out.
I put the AMNPS into the smoker and am in the process of seasoning now!

Just in time for Father's Day! My wife was going to try to get it as a surprise but wanted me to get exactly what I wanted so I ordered it today.
It should be here in perfect time to season it and my new MES 40" at the same time!

What I find is that as the coals burn down the fire gets harder and harder to control with or without the temp control units.
With the risk of hijacking this thread, I think if I can figure that out I'd be golden.
With all of that...
I have had a heck of a time with the Stoker I bought last year. Part of it is because I haven't had a chance to play with it as much as I'd like but I have had similar results.
Closing down all the vents except for the top exhaust helped out but I still had wild fluctuations and seemed to burn...
If you want versatility then buy a WSM and a Weber Performer. You have 2 pieces of equipment but you'll probably still be in for less than you'd pay for a BGE. That's my current setup and I love it. Not to dish on BGEs but man the price is hard to justify when I can put out the same quality...
