    Check the big green egg seals on eBay,  eBay item number: 181264596085 They are 15' long for $14 delivered, dims 7/8" x 1/8" and adhesive backed nomex. She might not notice!!!!  1/8" thick should be small enough not to spring against your hinges but still give you a good seal, worth a shot...

    How air tight is your firebox including the vent cutouts? The PID should be able to hold that range in steady state if it isn't working against leaks.

    Don't worry about the inside of the firebox, you don't want the taste of burnt paint on your food. Eastwood usually has good products, I've used their stuff restoring cars in the past. Used some of their header paint that held up well so I assume it is the same base material.

    You had a good day! I would suggest doing the season and then cooking on it. The best way to see if you need changes is to crank out some meat and have a taste, if it is good, then paint it and call it good.

    Welcome Cracksmoker, Good job! All I can see you will need to buy is a couple of thermometers and maybe some wheels. It is fine for the RF plate to be that height above the grate. Did you use Dave's tutorial to do your calculations?

    Go with the 8" and 28-30", you need some height to produce draft.
