You have a deal Bearcarver. The next time I do a venison smoke with my hunter buds I will make sure you are invited - seriously. I'm just a bit north of Lancaster. My next wild game smoke is a venison meatloaf.
JIR:
I did a similar thing on my next brisket - posted as two briskets. I didn't post this but I added some beer and beef broth to help keep it moist and it did make a difference.
Thanks
Well, I wish I had some pictures of the before but things got a little crazy getting ready for a party so I can only show you you the after so to speak. I had a bunch of tenderloin vacuum packed from last year's deer(s) and I thought I would do a first smoke with venison. I had already sliced...
Panda: I have never mopped or sprayed for a full cut of meat but there are those that do and swear it is the way to go. Mine have always been rather moist even without a water pan that some use. Although, when I made burnt ends last weekend and I smoked some venison tenderloin at the same time I...
Eman you are right on point. As soon as I tell someone that you are looking between 3 and 18 hours for a smoke depending on the meat and the cut, their jaw drops. And I quickly respond with "it's a labor of love - it's not a grill". You get what you pay for and in this case we pay in time but as...
Gotta love it Dean. My wife and I just ate the last piece today from the weekend smoke. And she was whining - "it's gone". So I decided to surprise her since she is headed to the beach Friday - Sunday with a girlfriend. I'm going to smoke a pork picnic and another brisket over the weekend. I...
Thanks mballi3011,
I have had calls from folks at our party wanting to know how to "make this stuff" because it was soo good. Too funny - how do you make this stuff? Time, energy, reading, smokingmeatforums, dedication, and of course if all else fails; put a cow on the roof of your house and...
Dean - do smoke one. And I would encourage anyone who has been hesitant to try a brisket to do so. It is much more forgiving than you may think. And of course I have already spoke to the rewards.
Pandemonium, I know this is late since you have already smoked that puppy and I didn't read all the posts in their entirety but as newby I have been there and have a few suggestions. Fruit woods have worked best for me; in particular Apple; Oak and Hickory in moderation, and as was suggested...
An interesting and frustrating smoke; but all turned out well. Fourteen people were headed to my place for a smoked brisket that I had been raving about for some weeks. I decided to smoke the day before just in case something happened. And it did! For the most part we have a bit of a breeze but...
