Welcome to the group. Your smoker is from what I hear is a good one. I'm a charcoal/stick burner myself, but that's what I like. Temp is much easier to maintain in yours. For flavor you can add apple or cherry woods works well with pork. You can try adding apple juice to the water pan. Finish...

    Smoker I built.

I think I will have to keep this one. Plus I don't think my wife would let me make another one. Had to do some talking to get this one to go home with me.

    Smoker I built.

I sure will. Have to smoke something for the guys at my shop that have been seeing the build happen. Then the next will be a whole pig, might add in a couple of Briskets just because I have the room and that's more food for our party.

    Newbie from the Ozarks

Welcome to the group. Pork is a great smoked meat. Not sure what kind of wood you plan to use but Hickory, Apple, and Cherry all work will with Pork. If you plan to pull it you need to cook to 200 degrees and a temp probe is the best for that. Good luck and keep smoking.

    Smoker I built.

The cook chamber is 65 inches long and 24 inches across. It has 2 racks with the upper one removable. I made it to fit my height, I'm 6'7" and got tired of low work areas with the others I've had or have seen. The racks are 54" by 24" and the upper is 54" by 16". Can't wait to get good use out...
