MES Generation Number Recognition Pictures & Info (Digital Units)

Bear - Just found this on Cabela's. Seems to be the Gen 2.5 without the window which I think I prefer. Cabela's also offers a "lifetime grantee" on Cabela's branded items. Is $279 a good deal for this unit? I don't want a remote or a window so I think this should fit the bill. Will this thing...

    1939 Frigidaire Build.....Wife is pissed!

Thanks for the info. Mine is still a slow work in progress. Having a 18 month old son doesn't allow for much time in the garage and we're expecting another in Feburary. Hopefully by next summer I can get this thing wrapped up! In the mean time, I've got 4 other smokers that work just fine! I...

    Latest brisket

Looks Great! Did your point and flat come out tender at the same time?

    Doing two packers

Great Thread. Do you know how many ounces of injection you used per lb? I cooked my first prime whole packer brisket a few weeks ago. The flat was soft and point was still firm so I get cooking. Once the point was like butter, the flat had firmed up. The point didn't need anymore moisture as...

    Using inlet pipes

Would black pipe be safe even if it did get hot say 350-400°? Also, there is a company that sells brand new un-lines drums near me for $55 which I plan on buying. Do i need to remove the outside paint by burning it off/wire wheel and paint with high temp paint or is it safe to leave on?

    Using inlet pipes

Dave, Great plans for the inlets. I plan on using this for my next build. Seeing that a small portion of black pipe will be inside and somewhat near the fire basket, is black pipe safe at higher heat compared to galvanized? I know galvanized is a no no for anything food related. Just wanted to...

Can anybody help Identify what this originally was used as?

Guy just confirmed it was in fact a food warmer. Are these safe for higher temps or should I just keep working on my Fridge build. I thought this would be nice and cheaper than my fridge build since it already has built in racks and metal inside.....

Can anybody help Identify what this originally was used as?

Anybody know what this originally was. Oven, food warmer or refrigerator? My only concern is what type of insulation it has inside and will be be safe for temps north of 350°? I have roxul at home, but not sure how big of a pain in the ass it would be to add/change the insulation? Guy wants $150...

    Chuck Roast (Best Ever—SV)

Looks awesome! I agree. I did a arm roast and it was awesome. I reduced the juice in the bag and added some beef broth, garlic and fresh rosemary and it made a beautiful Au Jus. For the price, you can't beat it and I think they have more flavor than a NY strip or Sirloin. This was an arm roast...

    1939 Frigidaire Build.....Wife is pissed!

. There's some bigger chunks in the corners that are difficult to get a scrapper in there. I just bought a torch that gets 3500°  Do you think that will take care of it better than cleaning it with a rag or will I still need to go over it with a rag after I burn it?

Chuck roast - thoughts on what went wrong?

I just did a arm roast which I believe is close to a chuck roast. I seared it first and then SV for 20 hrs at 135 and then under broiler for 10 minutes. My roast was still very firm like a med rare roast beef.  I would suggest suggest smoking it first to maybe 140° and then SV. for 16-20 hours...

    1939 Frigidaire Build.....Wife is pissed!

After using a paint scrapper for 45 mins, I forgot I had an oscillating multi tool. This worked great for getting the big chunks of tar off. I used 3M adhesive remover and that turns it into butter. Only issue is when I wipe it, the tar just smears. It would take me about 10 cans at $20 a piece...

    1939 Frigidaire Build.....Wife is pissed!

Well I took a little hiatus from this build. Almost a year later. Ripped out the old insulation and bought some roxul to replace it with. I've got lots of tar around the whole tub. Do I continue removing it or leave it be?

    Sous Vide Arm Roast

I had a 3.5lb arm roast in the freezer so I decided to Sous Vide It. I watched the Chef Steps Sous Vide Chuck Roast video and followed his direction and recipe.  Seared the outside in a little oil and placed in a vac sealed bag. Threw is 6 gloves of garlic and 2 sprigs of rosemary into the pan...
