What PID are you going with and how are you wiring it? If you have directions I would be interested in seeing them. Will there be a significant advantage of having the PID vs. just setting the temp you want and hoping it stays within + or - 10°.

I did ribs on mine this past weekend in 15° temps. I had it at 250° and it held temps very well. Had my maverick inside and didn't see much in fluctuations. I did notice a 15° difference from 2nd from top to 3rd from top rack. Might of been because the bottom prob was near the meat.

This is Popp's Country Style Sausage recipe that I always use. I buy the ground sage in 2oz bags and I believe that almost equals a half cup for me. I use table salt, not Kosher.
¾ cup salt
½ cup black pepper
½ cup sage
put in ziploc and shake thoroughly, then use 1 tbsp per pound of meat.
I heated up some garlic and rosemary and threw it into the bag with the roast. I wouldn't say mine came out juicy, but it was extremely tender and had decent flavor. Made a great Au Jus from it also.
