Looming for a charcoal smoker - $200 range

I owned a Traeger for many years and it did a great job until I wanted to dial in the temp to a specific setting... That's when I moved on to an offset cooker. The OK Joes units in my area were being closed out and after some work it turned out to be a great cooker. I love tending the fire and...

    Traeger smoker anyone ?

When I did own a Traeger it could go for hours on the smoke setting with no issues... I used it most when doing large batches of fish. Be aware that it can be really tricky to get predictable temps with Traeger units -  even with the upgraded temp control unit. This isn't to say you wont have...

What are you paying for lump?

I just grabbed a 17.6lb bag of Royal Oak Natural Wood lump for a little under $12 at Home Depot here in OR.

    Smoked Salmon

Normally family members drop by with a lot of fish for me to smoke. It's been a slow few years so I grabbed a few pounds I'll happily be smoking tomorrow. My wife isn't a fan of seafood, or any fish, so a small ziplock will go over much better than 3-4 eight-quart bowls in the fridge. Great...

Here's another link  for handle ideas. These spring handles seem to be a good way to go. My unit has a steel rod with cotter pins that hold it in place with one of these over the steel rod. Maybe these exact ones wont work, but it's an idea that should help keep your hands safe. No burns from...

Making a basket is pretty easy. Here's a link to the tutorial I used. This may help with airflow etc so you can get up to cooking temp a bit faster.

I have a similar OK Joes smoker with mods and I'll hit 225F in 25 minutes. I've been using a volcano to get some charcoal started and then dumping those into a basket full of lump in the fire box. Ambient temp was in the 80's so I can see this taking a little longer if things are cooler but 2...

    Beef Short Ribs

What a great afternoon. Everything turned out better than expected. No internal fatty photos - I wrapped it up and took it to my friends as soon as I pulled it off the pit. Ribs followed 45 minutes later - corn & potatoes disappeared really quick~

    Beef Short Ribs

Here we go... it's been a busy morning. Got everything for the fatty laid out and 'assembled'. I've never washed my hands so many times in such a short period of time! I let the fatty rest in the fridge, and pulled out the ribs as I went out and got the pit up to temp. Came into a big pile of...
