Personaly I would test the thickest portion of the thigh and take it to NO MORE THAN 165.
after it rest for 20 to 30 minutes the temp will have climed to over 170. Any higher temp before pulling from the smoker will lead to dry breast meat and an overdone bird, in my experience.

I remember reading on the SMF once that whoever the poster was had heard that rubbing turkey or chicken skin with cornstarch prior to smoking would yield a crispy skin. Has anyone ever tried this?

We love lamb at my house and find the best prices on it at Sam's Club. They are about half the grocery store price, chops, racks, whole leg , and boneless leg.

Bryan, most likely if you take your knives to your local grocery store's meat dept. they will sharpen your knives for you at no charge. If not , find another grocery store!

I've had a problem with the base and remote losing contact. When I called the company they said that the batteries that come with it are not very good and to replace them and see if that didn't correct the problem. I have not changed the batteries yet... been using another thermometer.
