I am about to try my first attempt at making roast beef for sandwich. My question is, I will have about 3lbs after all said and done, should I slice all of it and then vacuum seal some for later. If I vacuum seal how long would it stay good without freezing it.

Do you have any recommendations on how to adapted my stoker to an UDS. I would need the fire box to be draft free except for the air intake from the stoker. Would the 10CFM be good for a 55gal drum? :-/

Thank you. I have been looking at the WSM. I think your probable correct with this being the best option. Any idea how long of a burn I can get with the 22" unit at temp around 225 with the stoker and lump charcoal?

Thanks for the reply...Very true with the temp not time. I love the fried so much, I can do a 16lbs bird in about an hr. The guests are weirded out when they get here and the raw turkey is in the refrigerator.
