I no I shouldn't eat that much but when I smoke I overeat, it is so darn good it's hard to stop.

I think you are correct, I always preheat my MES's to 275° then put meat in and then set to the temp I want to smoke at and then add wood chips and I would also figure 4 per shelf so 16 total
