Kitchen Essentials - must haves for a better experience

I have two different slabs of marble for pastry making that can be added to the list. Both can be prechilled in the Fridge to help prevent the butter from melting. One 12" round marble for pie dough, and one 11"X21" for laminated dough.

    Propane Grill Issue

If the grill is clear of bug stuff, and no leaks. Some tanks now days may have a leak detector that looks for excessive flow. Try opening the propane tank valve slower. A leak at thee tank connector can trigger this too. Just saw Chopsaw posted the same thing.

    Simple Chili Dogs

I am a chilidog connoisseur. Those sure look good. I use a much leaner meat to make a finer texture. Usually, ground Sirloin. Some use ground round. Have you watched the PBS show, "A Hotdog Program"? I have eaten at the Varsity, Nuway, and Andersons.

Still remember the old BBQ list days when 9600 baud was fast

The biggest change in BBQ I have seen outside of equipment is the use of more exotic, rubs, wraps and injections. Kind of pulls away from BBQ origin where blue, smoke flavor was King in my opinion. Maybe more rightly stated as taking a cheap piece of meat and making it taste good using what...

Favorite Way to cook a good steak

Dales Steak seasoning plus a bit of fresh ground pepper then a grill "hotter than all hell fire and damnation". Oki Joe's Rider DLX 1200 is one of the best searing pellet grills on the market. https://www.dalesseasoning.com/ Warning, do not apply more than a few minutes before grilling. This...

Stacking meats in a vertical smoker

I always rotate from top to bottom, and back to front once or twice if it is a wood burner no matter if it is all pork. A good question though when mixing pork and beef. I ran ribs and a chuck roast a few weeks back but never really thought about what was on top.

Still remember the old BBQ list days when 9600 baud was fast

Just joined this forum. Most of the guys on the old BBQ list I first signed up to from the early internet days are probably dead now. That is how long I have been barbequing. My favorite BBQ places are around Birmingham AL back in the 70-80s. Places where you can order BBQ sandwiches by...

    Poblano Recipes

Roast on your grill, place in bowl, cover to sweat, peel, remove seeds and vanes. Cut up and place in blender with just enough water to puree. Now you have a wonderful, plain, green sauce. I freeze mine 1/2 cup plastic containers. They can really boost your favorite BBQ sauce. Perfect for...

    Rider DLX 1200 Fix

Thank you for the welcome. I threw on a chuck roast for a test. Set the controller to 200F. Used no water pan or any other heat blocker. I put it on the wire rack on the middle rack postion. The chuck roast was over the middle grate where the fire box is on the Rider. Smoked it five hours...

    Rider DLX 1200 Fix

Gen 2 Rider DLX 1200 The well reported built in error in the controller between setting and Act temperature is not fixable. It can be however, be minimized. I installed a taller chamber temperature Probe. It is about 3" taller than the original probe which puts the RTD's tip at about the...
