9 hours in, it's at 187. I ran this about 210 overnight since I didn't want it to finish too fast, then bumped it to 230 after I got up. It's looking really good.
Brian85, I should have added that I do have temp probes. Planning for 1 1/2 hours per pound, but will pull it out when it hits 195'sh. Might go a little toward 200. Fully expect it to take either longer, or shorter. It's done when it's done.
I'm doing my first brisket tonight. We want this to be done for lunch tomorrow, so I'm starting it about midnight. Bought a 6lb brisket flat at Costco. Going to rub it with salt and pepper, and put it in a MES 30". Planning on a smoke for 1 1/2 hours per pound, and then some rest time after...
I did the 3-2-1 method for my first smoke, and while the ribs were good, they were a little dry. I did not use a pan of water in the smoker, and maybe I should have. Also did not use any sprays during the smoke, and maybe I should have. It's a learning process. Good luck!
The smoker arrived yesterday. Unboxed it last night before bed, then got everything else ready, including my AMPNS and my Maverick ET733. I'm doing the 3-hour burn-in right now, and the ribs will go in right after that. My wife was so excited, she already invited her parents over for dinner. ...
daRicksta, I did buy that 20070910 model, 30", no window. Old school for me. Want to get into smoking, but didn't want to break my bank. It's for just my wife and myself, so decided to go small.
daRicksta, fuhgetabout it. How much BBQ have you made? Who cares what it cost, you've gotten your money's worth. I just bought a Gen 1 MES 30" digital with no window for $179 yesterday. It'll be here tomorrow.
