    First Smoke Thursday (Whole Chicken)

Landman 3495CLA charcoal rig.  Has very small box for fuel..  biggest problem is when putting chunks of wood (Next time going to chips). Gets waaay too hot fast, but I can get it down without too much damage.  Still a pain in the butt.

    First Smoke Thursday (Whole Chicken)

Why thank yee very much! Been fighting a Pork Butt for the last 14 hours today.  Staying to course....  Just trying to maintain temp as best as I can (which is VERY hard).  Sure it will rock though.

Hammering out the stop notch in side dampers

My grill has stoppers so you can't completely control the temperature.  Landmann instructions it is the law to not completely close.  I'm calling BS on that...  It's difficult to maintain steady temp with a charcoal grill if you can't close them once in a while to slow things down.

    First Smoke Thursday (Whole Chicken)

Decided to go easy and ruin a chicken first... Little did I know, it would turn out to be the best and moist chicken I ever had. I followed most of what I have read around here but I did not brine.  Instead, I injected my own concoction of Olive Oil, melted butter, garlic powder, brown sugar...

Maverick ET-72 as grill temperature thermometer

Excellent thanks folks!  For whatever reason my ET72 is single probe.  But I have hanging down through chimney now (near cooking level) and it's reading great.  I am very impressed with my Landmann 3495CLA's thermometer.  I actually seems pretty spot on but I'll keep with the Maverick too.

Maverick ET-72 as grill temperature thermometer

I bought two thermometers (when tired) and ordered the wrong ones.  I ended up with to digital thermometers for food.  I had used the Taylor yesterday for a whole chicken and it worked good.  I want to use the Maverick to track grill temp.  Is there a way to set  it up for that?  Just hang...

    First smoker arrives tomorrow

Woohoo!  The Landmann Vertical (Charcoal) 3495CLA is arriving tomorrow...  Going to do a dry run to get a feel for the temp control, then I'll try a whole chicken to start, before I get into the good pork and beef.  Can't wait!  Does anyone have this model?  Any mod's I might want to consider?

    Howdy Folks!

New wannabe smoker from Chicagoland/NW Indiana.  Was going to put off trying smoking till next year but after this past Sunday's BBQ Pitmaster marathon I have the itch like crazy.  Trying to ignore my impulses is not easy! I'm looking to start small so going to just put my first smoker on my...
