One more thing to take into account whether the wood you got is kiln or natural dried. With kiln dried wood you need to watch out for the moisture content. Ideally you want between 16-20% moisture.

I saw your post and I am not sure if I will have the same temp swings since the Pellet Pro has a much bigger cooking chamber and a built in vent on top to help regulate the additional heat.
I tried smoke tubes in my Camp Chef and I didn't feel it added enough smoke flavor. It could have been because I was using one that only works with pellets. The Pellet Pro is WAY bigger than my Camp Chef so I assume a tube would work even less effectively.
Picked up a Smoke Daddy Pellet Pro on Craigslist for $350. Would you guys recommend getting the Heavy D (the heat deflector it came with is pretty warped) or Notorious P.I.G. for extra smoke? I did a search and didn’t see any posts about the Heavy D in a Pellet Pro vertical.
Thanks for the pics Chopsaw. Yeah I read all the reviews for both the 980 and the Smokefire (gen 2) and they both have rave reviews. I guess my goal is to get as close to an offset smoker flavor profile while allowing me to chase my small children all day.
I am just repeating what Harry said in his video. They are doing something right because Harry said the SmokeFire gave him the best result from any pellet smoker.

According to Harry Soo the reason why the SmokeFire produces more smoke flavor than other pellet smokers is because it uses vents instead of a chimney. This keeps the smoke in the cooking chamber longer and allowing the meat to absorb more smoke.
I would cross out the Masterbuilt Gravity off your list and replace it with the Char-Griller 980. From all the reviews I have seen it is by far a superior design.
