    WSM 18inch on its way!

Just ordered my first smoker - the 18inch WSM, and I'm quite excited to be honest :) Due to arrive on monday. I've read that these units need a few burns to get the temp to stabilise? One thing I'm unsure of, is how long will a full load of wood smoke for? For example, I'm looking forward to...

    Hi from Norwich

Hi Thrifty, welcome to SMF. I'm new here too, and it's one of the friendliest forums I've encountered, offering great advice about anything smoke related. Regards Andy.

    The New "BBQ" Restaurant

Well, to put the thread kinda back on track, I took a trip to Brighton today with one of my objectives being to check out one of the two eateries mentioned earlier in the thread. I went with a friend to Smokeys on the sea front, where I had smoked brisket chips n slaw to eat. I have wanted to...

    Kosher salt

Thanks Wade and Danny - I shall enjoy experimenting this coming weekend(and beyond) - I'll post the results.

    Kosher salt

Thanks Danny and Foamheart. my problem Foamheart is that the closest Jewish grocery to me would be in London(30 + miles away) - not a journey I want to make for a bag of salt as I'm sure you can imagine :) I have however ordered some from an ebay seller, just to give it a try. I also...

    Kosher salt

Kosher salt is just one of the things I had not heard of before starting to study smoking meats, brines and rubs. Whilst I have found a couple of sources of kosher salt in the UK, it isn't generally available on supermarket shelves, and I was interested to hear what others are using? Do use...

Smoked Chicken Legs and Lamb steaks

Thanks Danny and Darwin - I have to say I found the IT theremometer invaluable having only read up about lab steaks a few hours before smoking. This has only made me more hungry to try out more ideas. Need to work on rubs :) In a way, using the weber Q 2000(older version) grill is good as it...

Smoked Chicken Legs and Lamb steaks

What a day! The lamb steaks: After some experimenting last week with a thinnish sirloin steak going dry after an hour of smoking(no IT thermometer), I decided to give the lamb steaks 1/2 hour on the edge of the hot charcoal, using some applewood I cut 2-3 days earlier. For no reason other than...

    Hello from Guildford

Thanks for that Graeme - I keep an eye on it. I have some friends in North Norfolk, so I could give them a surprise visit if I won it! Lots of interest and reserve not met yet.....

    Smoked sirloin steaks???

Last week was my first ever smoking experience. It involved a sirloin steak and some hickory sawdust, and a weber gas bbq. No brine, no rub, I just wanted to taste smoked sirloin! After the charcoal was white ash and hot, I moved it to the left side, and I put a metal tin containing the...

    Hello from Guildford

Hi Wade, I tried replying to this last night but admin stole my reply lol Thanks for the info - I'm leaning heavily towards the WRM 18inch, or maybe something secondhand. Thanks for the heads-up on the Maverick thermometers - anything specific? Andy.

    The New "BBQ" Restaurant

I also got burnt in May lol, and was there only on Sun/Mon :) I think the wind made it feel cooler. September sunday only was dry/sunny except for a short patch of light rain. I'm based in West Clandon, which is 4 miles east of Guildford, just south of the A3.

    The New "BBQ" Restaurant

I spent a lot of time at Santa Pod during the mid 80's, drifted away, then visited twice last year for the euro nationals in May and September. I was pleasantly surprised by the upgrades - from new tarmac, decent wc's and something other than kebabs and burgers to eat! They even have a van...
