I have only done 3 briskets since getting my pellet and I have never separated mine. Last one was the best (neighbor must have eaten 2# at the table and took another # home). I have always wrapped mine in butcher paper. So far, I haven't done burnt ends, right or wrong.
I am struggling a little, guys. Beers usually don't stay in my "cellar" for more than a couple months and the "rarer" the quicker I open it.
Maybe I have a problem?!?!

Saw your post about lack of success with the PBC. Sorry, I have zero experience with them so can offer no possible help. But lots of experience on SMF and someone should be able to chime in.

Congrats on the offset. How is it going with the new unit?
I have yet to get an offset. Been drooling over a few but have not been able to convince myself. Just the 2 of us and the pellet, WSM, griddle and propane grill seems to satisfy our appetites.

I keep saying I am going to make the tour. Sisters live within 30-45 miles for the heart of the KBT. A few years ago, a nephew and his lovely bride had their wedding reception at Buffalo Trace.
