    if offset smokers are meant to be wood burners, why do we still use charcoal??

    I have had a hard time getting much above 225*. I'm using a char griller and I always have access to fire wood. So I am thinking about using some splits to try and get the temperature up. The last time I smoked I bought some chunks of hickory from home depot. But I'm not buying wood at those...

    I must say the Dutch oven pulled Pork came out good. It was so moist and juicy. Nobody complained about it and I almost did not have any leftovers. I got enough for maybe two sandwiches left. Only because I put it away before every one was done eating. :biggrin:

    YeahYeah I think I cut it in the wrong direction. I cut it right thru the package with out studying or thinking about it. I think both halves will have some loose meat. I know the side I prepped for the DO was split, a large section of meat and some loose pieces. I trimmed most of the fat off...

    just bought my first offset smoker

    If it is to hot with the damper closed look for all the holes in the side fire box. Fill the empty bolt holes with a bolt and nut.

    I picked up two 10 lb shoulders there today. Cooking half of one in the Dutch Oven tomorrow at the camp grounds and smoking some next weekend with some brisket.

    The pot is to small. I played with sitting the lid on the bottom. May have to take a look at it again today before I pack. I see Aldi has pork shoulder for $1.89 a pound. Headed there shortly. Getting some to smoke next weekend and most likely just going to try Dutch oven pulled pork tomorrow.

    Thanks for the mini wsm. Never read any of those yet. Had no idea what they were. I have a little smokey joe. To bad my old turkey fryer pot does not fit it. I would have built one tomorrow before heading out.

    I fully agree with this. The only time I drink something that ends in light is when it is free and ice cold. We all need some bottled water occasionally.
