Catering portions. How to figure per person.
these are good points, and oddly enough, I cooked ribs and chicken legs, sides of beans, potatoe salad and others brought other sides such as slaw, chips dip, etc so with all that being said, really tough to foresee whats gonna happen. That being said, after further reveiw, we had 24...- hotpit

Catering portions. How to figure per person.
Need some help with portions I cooked ribs for a party yesterday. Don't know exact count of people. I cooked 8 slabs and 15 pounds of chicken legs. I have 3.5 slabs left. How do the catering company's figure portions???- hotpit

Johnny Trigg and Myron Mixon recipes--UPDATED!!!
this forum introduced me to "tiger sauce" and it is very good!! somewhat asian hot sauce in nature maybe.. but wow for grilled meat.. but another good one to try is bobby-q-hot sauce, if you can get it. it is really good sauce on fried catfish!!!- hotpit

insulating the fire box
who on here has had experience with cooking with side burner with a insulated fire box and what are the biggest advantages/disadvantages???? I'm about to put all of my RF cooker together and am considering to take the time to insulate the fire box.....my "idea" is that 1) the paint on fire...- hotpit
