I have some salmon in my freezer that I vacuum packed last summer immediately after catching on Lake Michigan. So it has been in the freezer for over a year. I would like to smoke it and then repack in smaller packs and freeze to be used later at my leisure in a spread for crackers, etc.Would I...
I purchased a new cover for my GOSM Big Block, 3605BGD. I bought this one from Landmann as I could not find one anywhere else. the last one I purchased from Amazon and had the GOSM logo etc on it. I gotta tell ya, the one by Landmann is far superior than the other one I had. It is a little...
Well, just finished slicing it up and it is nothing short of amazing... Also, while slicing I noticed that it is a point instead of a flat. Guess that's why it is so much more tender. And had such more intense flavor. All I put on them was cracked pepper and kosher salt and used hickory and...
That's a great idea. I don't recall the small one stalling out much at all... if at all.Because it was up to temp in like 6 hrs. It sliced nicely and had just a little elasticity to the slices when pulled. I've got it wrapped in foil now and have cranked up the big block to around 300.
Hope it...
I put on an 8.5 lb flat this morning around 8:00 am 10 1/2 hrs later it's only at 163*! My temps have been real steady at 230 - 240 all day. My gosh, I've never had one go quite this slow before. I've verified both my smoker temp and internal temp of the brisket. I had another 6 pounder on as...
How long do you suppose you could keep salmon in the fridge after it has been smoked? I caught it last summer and immediately vacuum packed it. I smoked it last Sunday and the wife is still eating on it...
Well, I ended up just replacing the cylindar piece on my existing wire similiar to what is shown below. It wasn't exactly the correct size to fit onto the bottom of the ignitor, so don't know if it will stay on long or not... I had to expand it out a bit to get it to slide over the tip sticking...
From looking at the pictures you supplied, my problem is not my pushbutton igniter by the wire. It looks like Landmann has the wire assembly for about 13 bucks or so.
it snapped off right at the base where it goes in and I am unable to get the broken part out. Landmann will sell me a replacement for $9.00 but it is only the push button portion without the wire part. The original must be one unit where replacements are adapted so you can insert a wire into it.
Yesterday I did 3 racks of spares and 3 racks of baby backs and believe I could have easily gotten my temps up to well over 350* if I wanted to. Cleaning out that dang little tiny web in the orfice really made a difference in the performance of my smoker. If you have problems with low temps, be...
I have it on the inside of the door on my Big Block, which I've had for 4 - 5 years. I have not noticed that it has caused any problems such as flaking off on the food or anything like that. But there are pieces gone...
Been having trouble getting my Big Block above 190 or so lately. I decided to do a little maintenance so I went to the music store and purchased a brush that is used to clean out the tubes on a trumpet. It has bristles on each end and is a coated cable maybe 12" long or so. Really worked well...
I would suggest two things... make sure you have a good looking flame with good tips. If not, you could have a regulator problem. and the other, typically the installed temperature gauges are not accurate. Spend a few bucks and buy a digital.
I have some salmon in the freezer from a fishing trip last July. Would it be ok to thaw it out and smoke it and then refreeze it for later consumption? For some reason, I've always thought that it was not a good idea to refreeze previously frozen foods???
Thanks!
