@Raymo, I actually just did that this weekend when taking these photos.
So here is what i was able to figure out.
With the plates like you see in the pic, the bread for the most part stayed on the white side.

I feel like small flames would be better than smouldering. Smouldering would (IMO) cause excessive smoke due to lack of combustion.
