Welcome to SMF, huckfinn! I can't help you much with your search, but there are lots of folks here who have built their own smokers and some of them are reverse flow. I'm sure someone will be along shortly. I just wanted to say Hello and invite you to make yourself at home.
If you're not going to brine the bird, you might want to consider injecting it. We did that with a turkey for thanksgiving and got comments about how moist it was. The injected solution was butter, chicken broth and seasonings.
