8 hours in and I just exchanged & rotated the racks for the second time. IT averaging 180, with the smallest (boneless) at 190. Starting to smell really good around the yard.
I've got four butts going right now. I like to use Bad Byron's butt rub but I add brown sugar because I find it a bit too spicy, I use that on ribs as well. The best finishing sauce I've found is right here on the forum. Type finishing sauce in the search bar and check out Cheff JJ's finishing...
4 hours in and the IT is right at 140. Exchanged racks and rotated them as well. Plus a double batch of Chef JJ's finishing sauce. I love that stuff :-)
I've got two propane smokers that I'll bring tomorrow so I'll be doing the wings and turkey the day of. I've done wings the day before and they've come out great, I just like to stand around the smoker lol.
I have a buddy with a birthday tomorrow and he & his wife asked if I would smoke all the meats for the party. I am extremely flattered that they asked because it shows me my Q is getting better but I'm also pretty nervous because I've never smoked for someone else before and I want to make sure...
