A tree took out my firebox... OKJoe smoker

Hey guys... As you can see, I will no longer be able to control the fire in my box, thanks to a 65 ft tree that decided to fall down last week....  Any ideas on what to do here? Can I make this work again with current metal piece? Cut if off, and hope to find something that will work? Find...

OK Joe - cant get thin blue smoke

I have been preheating them... not sure the best way to do it, but tonight I was just doing some sausages so I put some splits right in the CC to warm up. I guess I could use the warming plate also? I will try some smaller chunks.. Hope that does it! I have tried everything else I can think of...

OK Joe - cant get thin blue smoke

The wood I use is dried and sold in big bags, I can cut it down smaller though.  I dont fill the basket up. I basically use it to keep the coals in a smaller area, thinking it will be hotter that way. Are you planning on putting wood onto the FB grate? Or resting on the bottom of the FB? Yes...

OK Joe - cant get thin blue smoke

So my new problem is that I cant get the desired smoke out of my OKJ. When ever I close the FB lid, the goes out within 20 seconds and I get the heavy white billowing smoke from the stack. I know this means the fire is burning inefficiently, But I dont know what to do. Leave the side door open...

Cleaning OK Joe or any offset smoker

Hey all, Just curious on methods people use to clean their pits, and the order/process. My booklet says to spray it down with water, let it air dry before firing up again. THEN it says to wipe down with paper towels. What do you guys do? Wipe down the inside of the CC with paper towels? Do you...

    charcoal basket Woes...

Thanks guys, I am in an offset, so this should help me a bit. I think it was a mixture of the charcoal and filling my basket too full. Will be doing some test fires this weekend as to not waste a bunch of food!

    Oklahoma Joe Smoker Temperature

I have the basket, baffle, and a dryer elbow down to the grate. I re-bent my baffle to allow more heat in, I think it was a little low. I had some major issues with the basket today. Filled it up with lump, lit 1/2 a chimney of briquets and put on top of lump. Nothing would take a light, and...

    Charcoal basket Woes...

So you don't use a charcoal basket at all? With all the stuff I've read lately it seems that everyone does.

    Charcoal basket Woes...

Ive got an OK Joe highland (the smaller of the 2). This bag of charcoal was B&B i believe. Im not sure if the just never really got lit up or what. I took the basket out, cleaned all the ash, and put it back in just to test. Thick, heavy smoke and only about 190 degrees. The coals on the bottom...

    charcoal basket Woes...

Hey guys, I got a sweet deal on a brisket last night so I decided to smoke it today.. I picked up some lump charcoal and some cheap briquets from academy last night since I used the rest of mine doing a test fire... I don't know if I did something wrong or what, but this smoke is becoming...

Should I only fill the basket half full of charcoal and use blocks of wood to fill in the rest?
